Recipe Of The Week: Chicken Milanese With Spring Greens

 I'm introducing a new weekly post that I thought a lot of you might like.  A recipe of the week post, featuring what I cooked that week for breakfast, lunch, dinner, dessert or even snacks and appetizers! You see we like to eat at this house!

I came across this recipe a couple of years ago and have tweaked it to what we like. But feel free to change it up to what works best for your family. Chicken Milanese with Spring Greens is an easy, and I will say pretty healthy meal. Everything is fresh and boy does it taste like it!

*****Ingredients at the end of the post*****

I use Yukon gold potatoes and wash and halved. I then place them on a foil lined baking sheet sprayed with vegetable spray. I drizzle EVOO (Extra Virgin Olive Oil) and give them a generous sprinkle of salt and pepper. Then I take 2 lemons and cut them in half and squeeze the juice over the potatoes. Throw those puppies on the baking sheet too! Bake at 400 degrees until tender.

 Next while the potatoes are baking, in three separate bowls, one for flour, one for the panko bread crumbs, and 1 egg whipped with 1 tablespoon of water.

Rinse and pat dry your boneless, skinless chicken breast and dredge in flour, egg and bread crumbs in that order. 

In a medium size skillet drizzle 2 Tablespoons EVOO in pan. Heat pan on Medium/High heat. Add chicken breasts and quickly brown on both sides, turning once.

Place chicken breasts on a foil lined baking sheet sprayed with a vegetable spray. Place in 400 degree oven and bake for approximately 30 mins. or until done.

While the chicken and potatoes are baking make your salad dressing. Which by the way comes from a friend on Instagram Jessica @HONEYNHYDRANGEA. She shared this delicious recipe and I knew it would be perfect for this dish! Although she made it with orange instead of the lemon. I can't wait to try the orange! So on to the recipe, in a bowl, add 1/4 Balsamic Vinegar, 2 Tablespoons Honey, the zest of 1 lemon, Salt & Pepper, and slowly whisk 1/2 Cup EVOO.

I buy the triple washed spring greens so they are ready to go. When potatoes and chicken are done. Place chicken on serving plate and mound spring greens on top of chicken. Place potatoes and lemon halves around edge. Drizzle everything with this amazing dressing. 
I also used a little freshly grated Parmesan cheese on top.
Serve with a nice crusty loaf of bread!


Chicken Milanese With Spring Greens
Boneless Chicken Breasts washed and patted dry
Yukon gold potatoes, halved
Spring Greens
2 Lemons and their juice
Panko Bread Crumbs
1 egg whipped with 1 tablespoon water
Parmesan cheese

Ingredients For Dressing
1/2 Cup EVOO
1/4 Cup Balsamic Vinegar
2 Tablespoons honey
Zest of 1 lemon
salt & pepper
Whisk all together well

Tips To Starting Your Day Off Right!

Good Morning lovelies!

I hope you are having a good day! Things have settled down here a bit, thank goodness! As I mentioned a while back my Son and DIL are expecting twins and they also have a 2 year old little girl. Well our DIL ended up in the hospital for a week and a half on bed rest! But, she is now home and everything is back on track! 

During that time we kept our 2 year old Granddaughter including over night stays! We loved every minute of it and really felt like we got to bond with her even more! She's an angel with the sweetest personality! As most of you know we're empty nesters. So in order for the week to run smoothly and to not get too stressed out with having a 2 year old in the house again, I implemented my morning routine that I practiced when I had 2 boys running around! Nothing crazy! Just simple tips to get your day started off on the right foot!


Get up a half an hour earlier than the kids do
Our Granddaughter generally wakes up at around 8:00 so what I would do is set my alarm for 7:15 and actually roll out at around 7:30. Waking up on your own, and not getting startled awake is HUGE!

Immediately make your bed
I mean really, it takes just a couple of minutes and it just puts you in the right mind set!

Hop in the shower
Lather up with a beautiful body wash to awaken all your senses!

Put on REAL clothes
I know when I was raising my boys the summer was really bad, because I would get really lazy and sometimes not get dressed until noon! This made me feel gross about myself and unproductive. It's all a mind game people! So just throw on some yoga pants or jeans and a T, nothing fancy!

Put some makeup on
This is a must in my book! Some light foundation or tinted moisturizer, blush, mascara and some gloss. That's it!

Throw a load of laundry in
You will be surprised how this helps with your daily chores by getting a load laundry done first! And make sure and complete it by drying, folding, and putting it away!

Empty the dishwasher
Hopefully it was loaded and it ran after dinner the night before. I always make sure the sink is empty of dishes and I also scrub my sink every night and set out a fresh dishtowel. Again 2 minutes!  Starting the day with an empty dishwasher and sink is also just one of those little steps that makes the day run more smoothly. 

Make your coffee the night before
The last thing I do before I go to bed is get my coffee ready to go and set everything out, even my cup and spoon.

New Blog Design!

Happy Sunday friends!

I just wanted to drop in with a quick post to show off my new blog design! I just thought it was time for a little refresh and a "cleaner" look! And I'm loving it! I especially love the new black and gold color scheme.  I enlisted the help of Emily from Designer Blogs and she did an amazing job!

I'll be back later this week with a post about my morning routine and a few simple tips that I've learned through the years to get your day started... on track!

Coastal Influences

If you've read my blog long enough you know that I love the coastal influence in home decor. I don't know if it's because I live in Florida or because I just love anything to do with the water, I'm just drawn to it. 

So now that Spring is here I'm ready to bring in my own coastal touches. 

 I changed out the framed chalkboard that was above the wooden cart and brought in the big fish picture that I got a while ago from Homegoods. The colors compliment the shell pictures to the left well.

I also finally broke down and bought the giant clam shell from Ballard Designs, and it's everything that I expected! They show it used in a variety of ways from plants to drinks in ice for a party! That's my kind of purchase!

I also like the way it looks filled with beautiful succulents.

I'm not sure yet which way I'll style it, but it will be fun that I'm sure of! I can even see it filled with beautiful white christmas ornaments!

I think one thing I love about the coastal feel is just the easiness of the style. Nothing fussy, nothing formal, nothing uptight.

It's just a come on in put your feet up kind of feel, and for me that's home!

Bringing In Orange Decor

I love changing my accent colors in my home, almost as much as I like changing my clothes! Well, maybe not that often. But I do change them a lot! I feel like it's the easiest and most inexpensive way to change the look and most of all feel of your home. That's why it's important to purchase your main pieces as neutrals.

Right now my new color that I'm slightly obsessed with is orange! Now years ago I would have turned my nose up in disgust over the thought of bringing orange in to my home! The image of the Brady Bunch house would immediately come to mind! But now that I've grown and matured (cough cough) I've grown to appreciate this lively, cheerful color!

I snapped this picture the other day after I brought these Navel Oranges home from the grocery store, and it's what got my wheels turning for the color orange! Funny how you can find inspiration from something so simple.

These bold geometric pillows are really calling my name! Just use a splash here and there, nothing overwhelming and your home will just feel happy!

I'm really thinking that I would love some orange to go with my navy and white patio furniture! Orange and Navy really compliment each other well.  Maybe that's why it's the colors of the Florida Gators! We're not partial here!

Galvanized Goodness

I realize I might be a little late in the game with this one. But, I thought I would pass it along to you anyway. It's galvanized home decor. Wait. It's galvanized goodness!  No longer is it confined to a washtub or watering can. If you can think it, it's galvanized!

I chose all of these items off of 
Their line from Smith & Hawken is absolutely beautiful!

I love these olive buckets whether vintage or new! I have this one from Target and I'm sure I'll find many uses for it.

I have a similar tiered tray from Pottery Barn that has been used from food to decor to plants on the patio.

Where I've Been!

Good Morning!

I know I've been MIA for a while, but what can I say life happened! But I have missed you all! And I have missed posting to my little ole blog. 

So to catch you guys up let me give you the low-down! First off, the most exciting news is we found out that my Son and DIL are expecting twin girls in July!! We are over the moon excited! They have a precious 2 year old little girl, so their house will be bursting with PINK!!

Next I had some babies myself, actually 5! Fertile right? No not that! I finally got my baby chicks about  3 weeks ago and they are precious!

Sydney doesn't know what to make of them!

They are 3 Buff Orpingtons and 2 New Hampshire Reds. Of course they already have names. They are Delilah, Layla, Maggie Mae, Maybelline and Roxanne. 

Can you guess where their names are from? They are all named after some of my favorite songs! They are growing so fast! These pics are from when I first got them, and now they have started to feather out! I'm a proud Mama!

I've nicknamed them the Steel Magnolias! This is their coop where hopefully they will be moving to soon. I purchased it from My Pet Chicken
They have been so helpful for giving this rookie chicken Mom advice and answering I'm sure some really dumb questions. I would highly recommend them to you!

We had a lot of work to do behind the pool to get the coop ready to go there. Clearing huge 30 year old Azaleas, leveling the ground and having a concrete slab poured for the coop to sit on. It's been quite a process. But we figure once we do it right the first time, it should be very easy to maintain.

We just had a load of pine mulch delivered and we spent an afternoon spreading it all! Next Mike is going to enclose the sides on either end of the pool with fence and screen doors, to give them an area all to themselves. We keep saying that these chicks hit the jackpot when I picked them! Because their home is going to be awesome!
