Who Has Shrimp Scampi For Labor Day?

I hope everyone had a great Labor Day weekend!
We just returned from a week at the beach, and it was all that it could be!
Beautiful, relaxing and fun with family!
While we were at the beach it seemed that we had grilled a lot! So today, Labor Day I really wasn't in the mood for grilled anything really. What really sounded de-lish was nice pasta!
My all time go to recipe for pasta is Shrimp Scampi! If you haven't tried it please do, because your family will love you for it!
The butter, garlic, lemon, parsley flavor is a magical combo!
I snapped a few pics to show you that it really is so easy!
Recipe to follow:
Simple ingredients that I usually have on hand.

Saute garlic in a stick of butter and olive oil

Add shrimp and cook for 5 mins.

Meanwhile boil pasta in salted water. Add a little EVOO as well so pasta doesn't stick.

When shrimp is done take off of heat and add lemon zest, lemon juice, sliced lemons, parsley, red pepper flakes

 Toss all together with pasta and serve with parmesan cheese and some nice crusty bread!


Shrimp Scampi
1 pound peeled and deveined shrimp (I prefer tails off)
1 pound linguine
1 stick of butter
5 tablespoons of olive oil
6 cloves of garlic (chopped fine)
1 bunch of italian parsley (chopped)
zest of 1 lemon
1/2 cup lemon juice
1/4 red pepper flakes (I use more for a little more zing)
lemon slices
salt & pepper

Boil pasta in large pot of salted water and add a little olive oil to prevent sticking (about 7-10 mins. until al dente)
Meanwhile in a large sauté pan melt 1 stick of butter and 5 Tablespoons of olive oil. 
Add garlic and sauté (careful! Garlic burns easily) 
Salt and pepper shrimp
Add shrimp and cook until pink about 5 mins.
Remove from heat and add parsley, lemon zest, lemon juice, lemon slices, red pepper flakes.
Toss in pasta
And top with parmesan cheese and garnish with parsley
