Chicken Pesto Bake
Well the Holidays are over, and time to start doing 2 things! Start cooking again, and start cutting back some! I said some! Don't judge! I have to be honest since Christmas I haven't really done any cooking for dinner. It's been dinner out, and my husband's favorite take out. I kid. Not his favorite at all! So I promised him I would cook last night!
If you haven't discovered Skinnytaste.com you really need to head on over there and try Gina's recipes. They are to die for! Everything is counted out, calories, carbs, even Weight Watchers points! Got to love that!
I've made this recipe several times and every time it's delicious and easy! The chicken is so moist, and that fresh pesto is amazing!!
I made it with a little pasta alfredo. I said cutting back a little! No story there! Don't be intimidated by making your own pesto either. Easy peasy! I would highly recommend the little mini food processor from Cuisinart. I have the 4 cup. You would be amazed at the things this little handy appliance can do. I love it! Anyway, there is no comparison to fresh pesto compared to store bought.
