
Lemon pound cake

I planted a Meyer lemon tree about a year ago, and it yielded about a dozen or so lemons! If you've never had a Meyer lemon, you should try one. They're not as tart as a regular lemon. Kind of between an orange and lemon I think. So I thought why not make a couple of pound cakes and put them to good use. I made one for now and froze the other one for later. If you're going to freeze them then I would wait and glaze it after you have defrosted it. The recipe I used is Barefoot Contessa's.
